Sabudana Vada | साबूदाना वड़ा
Ingredients: For Sabudana Vada Mixture:
1 cup sabudana (sago pearls)
2 medium-sized potatoes, boiled and mashed
1/2 cup roasted peanuts, coarsely ground
1-2 green chilies, finely chopped
1 teaspoon black pepper powder (adjust to taste)
1 tablespoon lemon juice Rock Salt to taste
Fresh coriander leaves, finely chopped Oil for frying For Serving:
Green chutney or sweet curd (optional)
Instructions:
Preparing Sabudana:
1. Rinse the sabudana in a fine-mesh sieve until the water runs clear.
2. Soak the rinsed sabudana in just enough water to cover them for 4-5 hours, or overnight. They should become soft and swell up.
3. After soaking, drain any excess water, if any. Be sure there is no water left; otherwise, the vadas will turn soggy. Making Sabudana Vada:
1. In a mixing bowl, combine the soaked and drained sabudana, mashed potatoes, coarsely ground peanuts, chopped green chilies, cumin seeds, red chili powder, turmeric powder, lemon juice, and salt.
2. Mix everything well to form a dough-like mixture. 3. Divide the mixture into equal portions and shape them into small patties or vadas.
4. Heat oil in a deep-frying pan on medium heat.
5. Carefully slide the Vada’s into the hot oil and fry until they turn golden brown and crispy. Fry them in batches, if necessary, to avoid overcrowding the pan.
6. Remove the fried Vada’s and place them on paper towels to remove excess oil.

Chutney recipe
Ingredients:
1 cup fresh coriander leaves
1/2 cup roasted peanuts 2-3 green chilies (adjust to taste)
1/2 lemon (juiced) Rock salt (sendha namak) to taste 1/2 teaspoon cumin seeds (jeera)
1 tablespoon water (as needed)
Instructions: 1. Prepare the Ingredients: Wash the fresh coriander leaves thoroughly and chop them roughly. Roast the peanuts and remove their skins.
2. Blend: In a blender or food processor, add the fresh coriander leaves, roasted peanuts, green chilies, cumin seeds, and a pinch of rock salt.
3. Blend Again: Start blending the ingredients. If needed, add a little water to help with the blending process. Continue blending until you get a smooth, thick consistency.
4. Add Lemon Juice: Squeeze the juice of half a lemon into the chutney. Mix it in.
5. Adjust Seasoning: Taste the chutney and adjust the seasoning. Add more rock salt or lemon juice if needed to suit your taste.
6. Serve: Transfer the chutney to a serving bowl. It;s now ready to be served as a dipping sauce or side with vrat dishes.
